SALMON FILLET WITH ORANGE BASIL SAUCE   

Salmon Fillet Ingredients:
  • 1 to 1 1/2 lbs. fresh or frozen salmon fillet
  • 1/4 c. frozen orange juice, thawed
  • 2 tbsp. snipped basil
  • 1 tbsp. snipped mint or tarragon
  • 3 tbsp. olive oil
  • 2 tbsp. water
  • 1 tbsp. Worcestershire
  • 2 cloves garlic, minced
  • 4 sm. zucchini, cut lengthwise
Salmon Fillet Instructions:
Thaw fish, if frozen. For sauce, in a bowl, combine concentrate, basil, mint, or tarragon, oil, water, Worcestershire and garlic.
Rinse salmon, brush with sauce. Put in pan with a little oil on bottom. Put on grill; cook at medium for 4-6 minutes or until it flakes. Put zucchini on grill, skin side down, cook 5-6 minutes. Serve zucchini with fish. Serves 6.Enjoy !

GRILLED SALMON FILLETS WITH MELON SALSA   

Salmon Fillet Ingredients:
  • 1/2 c. fresh, pineapple, diced
  • 1/2 c. cantaloupe, diced
  • 1/2 c. honeydew melon, diced
  • 1/4 c. red bell pepper, seeded and diced
  • 1/4 c. fresh cilantro or mint, finely chopped
  • 1/4 c. honey
  • 1/4 c. fresh lime juice
  • Four 10 oz. portions salmon fillet
Salmon Fillet Instructions:
Put the fruit, pepper, cilantro, honey and lime juice in a bowl, mix lightly and set aside. Either use outdoor grill to cook the salmon or put the fillets on the second shelf of your oven and bake them for about 10 minutes at 375 degrees or until the fish flakes easily. Dress the fillets with the salsa, and serve with wild rice and a green vegetable such as asparagus spears. Leftover salsa can be refrigerated and served at a later time. Enjoy it !

TARRAGON LEMON SALMON FILLETS
Salmon Fillet Ingredients :   
  • 2 salmon fillets
  • tarragon
  • salt
  • lemon slices
  • butter
  • garlic powder
Salmon Fillet Instructions
Place salmon skin side down on tin foil in baking sheet; cover with butter, then put seasoning on to taste.
Cover fish with lemon slices and tent the fish in tin foil, and bake at 375°F degrees for 20-30 minutes. Enjoy the salmon fillet ! Nice !
